I have pinned so many tortilla soup recipes on Pinterest and finally tried one tonight. The only thing I did different was I cut the recipe in half (it still made a ton!) and I used black beans instead of pinto, because that is what I had on hand. It was really good. Really filling actually. If you like a good tortilla soup, you will like this one.

It is really good and really easy. Be careful not to overcook the chicken though so it doesn't dry out. It reminds me of the classic poppyseed chicken recipe that is a staple in our house and has most of the same ingredients which I love, because I always have them on hand, yet it is a new twist to it.
Then there was the Amish Bread...
OMG. Delish. I was out of bread and had zero desire to go to the store to buy some. So I broke out my little used breadmaker and made this. It's from allrecipes.com. I think I made it four times in one week, because we would finish a whole loaf in one day when I would make it. It is really that good. Probably not healthy for you, but really good.
Sugar Cookies
I actually made these yesterday for my husband to take to work. I was about a quarter of a cup short of the shortening, and I should have adjusted the flour accordingly. They turned out more like a shortbread. A really good shortbread. I will definitely try them again. the recipe is from orangeandbiscuits.blogspot.com.
I also made these chocolate peanut butter brownies yesterday...
They are cheap, easy and really good. I didn't have peanut butter chips on hand, so I just omitted them. The recipe is from bakedperfection.com.
For my husband's coworkers for Christmas I made a foursome of cupcakes. Their favorite was these Oreo cupcakes from keepingupwiththekunzs.blogspot.com.
I totally cheated on this one, however. I used a white cake mix instead of making the cupcake from scratch. It turned out really good and the frosting is amazing too.
The second cupcake I made was a chocolate peppermint cupcake which of course I can't find the recipe too now, and the third and fourth were the pumpkin cake recipe and lemon cake recipe that I previously posted.
The last thing I can remember making in the last few months was this asian garlic scallion noodles.
Yum and yum. It's from weekofmenus.blogspot.com. I added chicken to it, to make it more of a meal. I have plans to cook more! Hopefully I'll be posting more soon!
