It's been awhile! I am finally home after being gone 12 out of the last 14 days. And the two days I was in town, I had an old college roommate visiting so I wasn't really home. I'm excited to get back into the swing of things. I have my next week of meals planned and shopped for and am ready to cook. Also, my basil plant (which I used for this recipe) is still alive! Barely, but it's looking better every day. Yay!
This one is from myrecipes.com. I bought the ravioli (what I bought was actually tortellini, same idea, just a different shape) from Costco in the refrigerated section. The brand was Olivieri and it was really good and a decent price. I paid around $8 for the package and will be able to get four meals out of it. The sun-dried tomato alfredo was from Vons and was the Safeway store brand, also very good. I omitted the white wine. I don't have white wine in the house and didn't think it would make that much of a difference considering it only asked for 2 tablespoons (which would really be only one tablespoon for me because of course I halfed the recipe). Also, I added some crispy bacon to it because everything is better with bacon.
My version. The picture doesn't do it justice. It was really good. A few days later, I used the leftover tortellini and added some sliced pepperoni, the same sun-dried tomato sauce, shredded cheese and breadcrumbs and baked it. It was also yummy. And so easy.
