Yum and yum. Katie and I were out all day shopping so we had the the cheesy chicken enchilada lasagna leftovers for dinner. But of course we couldn't just have leftovers. So, we started with the Queso Blanco Dip from annies-eats.net. Because there was just a few of us eating it, we cut the recipe in half. It would be a great party dish. So creamy and just enough spice. I would recommend if it were for a party, keeping it in a mini crockpot, as the cheese hardens as it cools.
Then, we finished dinner off with the sopapilla cheesecake from realmomkitchen.com.
It is like a cross between a churro and cheesecake. How could you go wrong? We ate it just out of the oven. It was heaven on a plate. Again, because I knew there were only four of us that I was cooking for, I only used one package of crescent rolls and I cut the cream cheese mixture in half. I do that a lot. We aren't big fans of leftovers, and I like variety in my week. So I find that half of a recipe of most anything is just perfect for my family.
